Neon Pigeon's Mario la Pietra has always loved a good Spumoni - having first come across the cocktail in 2009 when he first watched the Japanese anime, "Bartender."

In his rendition of the Spumoni, Mario skilfully merges the floral essence of ROKU Sakura Blossom with Daiyame Imo Shochu's lychee and elderflower notes. The cocktail's fruity sweetness plays along with the subtle flavour of muscat grape, giving the final drink a fun, candied profile similar to Kyoho grape bubblegum.

Beverage Director, Mario la Pietra

Hailing from Southern Italy, Mario started culinary school at the age of 14, expecting to become a chef. However, everything changed in his second year, when he entered a cocktail competition, despite having no prior knowledge of mixology.

These days, Mario, who has trained at top bars like The Luggage Room London, spends his nights behind the bar at Neon Pigeon, an urban modern izakaya. Guests enjor a serene dinner, but when the sun goes down, they often find themselves in the midst of a vibrant party with Mario at the helm.

Spumoni

Crafted with the delicate essence of ROKU Sakura Bloom and the smoothness of Daiyame Imo Shochu, the cocktail is a symphony of Japanese sophistication. Campari adds a touch of bitter complexity while muscat vinegar provides a subtle tartness reminiscent of Italian vineyards. Enhanced with the zesty brightness of pink grapefruit, and finished with Perrier's refreshing effervescence.

Saturn

The Saturn cocktail is one of the world's most famous gin-based recipes. Neon Pigeon's take on the popular cocktail marries ROKU Sakura Bloom's floral resplendence with the tropical sweetness of falernum, clarified passion fruit, and earthy almond. Nutty undertones to end.

Gibson

There are countless ways to tweak the classic Martini, but one of its best spin-offs is the Gibson. In this version, the subtle complexity of ROKU Gin coupled with Tio Pepe, is elevated bt a touch of Amazu shiso for a unique twist. Pickled quail egg takes the place of the Gibson's usual savoury onion garnish, adding its umami undertone to the entire cocktail.
